During the germination process of oatmeal and buckwheat, the breakdown of carbohydrates already begins and the enzymes necessary for this process, amylases, are produced. Amylases are released during the digestion of carbohydrates in the human body from the salivary glands in the mouth and the pancreas. This digestion, already set in motion during germination, facilitates this process and thus digestion.
